Copper Cookware

Copper is an excellent heat conductor, and that allows cookware to be heated quickly and evenly for cooking. However, copper cookware tends to darken quite easily, and requires more care than a stainless steel cookware.

In a commercial kitchen, copper cookware should never be cleaned in a dishwasher using harsh chemicals. This could shorten the life span of the cookware, and might even corrode it.

Always use soapy water to clean the interior and exterior of the cookware. Dry thoroughly to prevent water spots. Never use steel wool to scrub the cookware.

To restore the shine on the cookware, use a specialised copper cleaner to polish it.

Copper cookware should never be overheated to prevent brown or blue stains. Try not to allow salt to have contact with the cookware to prevent small pits from forming.
